Explore the wild side of Oaxaca and the richness of western Kentucky as we invite you to experience the flavors and aromas of artisanal mezcal paired with heritage lamb. 

Our 5-course dinner will highlight whole lamb butchery from Freedom Run Farm alongside a selection of traditional mezcals from Bozal.

Freedom Run Farm is a local consortium committed to the stewardship and sustainability of  lamb farming of western Kentucky.

Bozal Mezcal is an artisanal and handmade mezcal producer featuring wild agave from the steep hillsides of Oaxaca.

 

1st Course

Lamb Tartare -pickled onion, chilies, red corn chips

Bozal Ensemble cocktail -acid adjusted lemon & lime oleo saccharum, Topo Chico, lime boat

2nd Course

Lamb Tamale -red corn masa, smoked lamb, mole rojo

Bozal Castillo neat pour

3rd Course

Summer Salad -melon, cucumber, onion, crispy lamb

Bozal Cuishe cocktail -prickly pear infused Dolin Blanc, citrus and marigold martini

4th Course

Seared Lamb -center cut lamb loins, mole Amarillo, purple potatoes 

Bozal Tobasiche cocktail -Aperol, sesame oil fat washed Yellow Chartreuse, lime

5th Course

Lime Tart -almonds, lamb tallow, red corn masa, meringue, mint

Bozal Borrego neat pour
